On a 2010 Buick Enclave, that hot-to-cold temperature change while driving is very commonly caused by a failing blend door actuator, and your suspicion is right on track. The blend door actuator controls how much hot air from the heater core mixes with cold air, and when it starts to fail or lose its position, the HVAC system can randomly switch between hot and cold even though the temperature setting hasn’t changed. It can be worse while driving because vibration or changes in engine vacuum and electrical load can affect the actuator’s operation.
That said, it's also a good idea to rule out a coolant-related issue, since low coolant or air trapped in the cooling system can cause inconsistent heat, especially at different speeds. If your coolant level is low, the heater core may not stay full, causing the air to go cold until engine RPMs increase. Start by checking the coolant level when the engine is cold, then listen for clicking noises behind the dash (a classic actuator symptom). If coolant is full and the problem persists, the blend door actuator is the most likely fix.
